Sample Irish cuisine not just on St. Patrick’s parade weekend but all year long at Chip & Stone Pub & Eatery.
Located at 129 Pike St., Carbondale, the eatery opened Oct. 19, 2017, and serves a menu full of Irish staples, such as Shepherd’s Pie, Bangers and Mash, Fish and Chips.
The restaurant offers discounts to seniors and military members daily until 5 p.m. as well as weekly specials. It also hosts special events, including sip-and-paint nights and trivia.
During the Carbondale Lighted St. Patrick’s Parade — happening this year on Friday, March 13 — Chip & Stone will stay open until 10 p.m. with the kitchen open until 9 p.m. Blue London will perform there Saturday, March 14.
Chef’s Table recently chatted with owner Eric Farrell, who runs the restaurant with his wife, Chrissy.
Q: What is the history of the restaurant?
A: The restaurant was a penny market prior to it being the Coach neighborhood bar for many years.
Q: How did your menu come to be?
A: Being Irish and realizing that Carbondale and the surrounding communities have large Irish populations, we believed an Irish pub with Irish food would be a great place for the community. Shepherd’s Pie, Bangers and Mash, and Fish and Chips had to be part of it. And we loved Mac ‘n’ Cheese, so an Irish Mac ‘n’ Cheese had to be on the menu. We started with just Irish and appetizers but have expanded the menu to include steak, prime rib, ribs, seafood and lots of great sandwiches.
Q: What’s your specialty?
A: Shepherd’s Pie, Prime Rib, Fish and Chips, Seafood Chowder, Stuffed Burgers and Deep-Fried Pizza.
Q: What are your most popular dishes and drinks?
A: For food, Shepherd’s Pie, Fish and Chips, Stuffed Burgers and Prime Rib. Our best-selling drinks are a Rum Chata Salted Caramel Martini, Sunrise Martini (Malibu rum, amaretto and pineapple juice), Love Potion 129 Hurricane (our address number), Orange Cremesicle Hurricane, Guinness, Smithwick’s and Harp Draft, other craft draft beer and also a lot of wine.
Q: What kinds of entertainment and specials do you offer?
A: We have a 10% senior discount until 5 p.m. and a military discount. We also have a weekly specials menu, sip-and-paint most Wednesdays, trivia every Thursday, and live entertainment on Friday or Saturday.
Q: Where do you see the restaurant headed in the future?
A: We see it growing into a local family restaurant and lounge — a real charming, relaxed establishment to meet with family and friends for a great meal and some really great inexpensive drinks.
