Bistro on Hudson was a dream turned into reality for owners Rick and Kim Svec.

The seafood restaurant at 115 Hudson Road, Plains Twp., serves a variety of seafood dishes including Lobster Boil as well as burgers, cheesesteaks and hand-cut steaks. Various seashore destinations inspired the menu, which also features Kim Svec’s own version of surf and turf.

Chef’s Table spoke to Rick Svec about the couple’s dining establishment, to which his wife brings decades of experience.

Q: What is the history of the restaurant?

A: Kim has been in the restaurant industry for almost 40 years. She has worked for many establishments in the Back Mountain, even owning her own restaurant near Tunkhannock back in the late 1990s. We have dreamed of owning our own establishment, and it came to fruition when we opened Bistro on Hudson in October of 2018.

Q: What’s your specialty?

A: Fresh seafood. Everything we do here, we are preparing fresh.

Q: How did your menu come to be?

A: It’s a conglomerate of dishes from traveling to various seashore destinations to a few dishes that Kim had in mind that she wanted to bring to our customers.

Q: What are your most popular dishes and drinks?

A: Our Seafood Boil is very popular. It is large enough to share, but some customers attempt to eat it by themselves. Also, Kim’s Seafood Stack is her variation of surf and turf. It consists of a filet, a crabcake, scallops and shrimp.

Q: What type of seating do you have?

A: We have table seating for approximately 40 people: three booths that can hold six to eight in each and bar seating for another 20.

Q: What kinds of entertainment and specials do you offer?

A: We have daily specials and several weekend seafood specials as well as prime rib on the weekends. On Sundays, we offer a Bloody Mary menu and brunch from 11 a.m. to 2 p.m.

Q: Do you offer catering, event space, etc.?

A: We offer catering for 10 people to 300 people.

Q: Where do you see the restaurant headed in the future?

A: We have a vision to hopefully add a deck on at some point and offer outdoor seating in the warmer weather.
